Brief Description


Serkele is a Baliwag cuisine which is a variant of the dinuguan and tinumis. Beef or sometimes goat meat is used in serkele instead of pork. Serkele has a thin, soup-like texture in contrast with the thick texture of dinuguan and tinumis.


Significance


Baliwag as a town has a fair share of traditional cuisine, but one that stands out the most is the serkele. This culinary recipe started to thrive in the ‘70s as small restaurants or kainansprawled in the streets of the town offering native dishes.
